It is fair to say that the team in Thomas Restaurant at Future Inn Cardiff are passionate about food. Their whole ethos is around using local produce to create a Welsh themed menu with traditional dishes. Unlike many other restaurants, all of the mouth-watering dishes are made on site using local, fresh ingredients. As all of the food is homemade, it means that those who have an allergy or require gluten free, dairy free or even a vegan menu can be catered for too.

The new summer menu

The dishes are indeed colourful and full of flavour. The new brunch menu has traditional breakfast items, as well as healthy options including the signature banana split served with avocado, strawberries, natural yoghurt, honey and toasted almonds. Some of the lighter bites on the lunch menu are an artisan homemade bread basket with olive oil, balsamic vinegar, sundried tomato butter and olives or a grilled tuna steak niçoise.

After a more relaxed daytime menu, things move up a notch in the evenings. You could start with the French onion soup with Gruyere croutons and homemade crusty bread or char-grilled asparagus with Hollandaise sauce and a poached egg before moving onto a sweetcorn, basil and smoked red pepper risotto, roast salmon with summer green vegetables and a creamy chive sauce or honey glazed loin of pork with spring onion mash, apple puree and jus. Sweet treats include homemade chocolate mousse, pistachio brownie, apricot puree and avocado ice cream or homemade white chocolate and blackcurrant cheesecake with blackcurrant sorbet.

Some of the notable new dishes on the Taste of Wales Menu include Welsh pan-fried venison served with a chocolate jus, summer cabbage and fondant potato or a traditional Welsh rarebit with rhubarb compote -trust us, it’s one to be tried!

The team behind the scenes

Led by Head Chef, Andy Martin, who has been working at Thomas Restaurant for 7 years. Even with no formal qualifications, he has a real passion for food which has allowed him to work his way up to top flight very quickly. Andy has travelled around the country gaining experience in 5 Red Star, 2 Rosette and Michelin Star restaurants and hotels. Andy is known for his imagination in the kitchen and has a talent for creating flavours and has a good eye for detail especially when it comes to presentation.

The front of house team is led by experienced restaurant hotelier Adam Jasiczak, who joined us in 2018. He has a wealth of experience in hospitality and has trained in four-star and rosette establishments has meant he is a fantastic addition to the team. In the short time that he has been with us, Adam has already improved the established professional standards from greeting theguests to how the food is served.
